A Day in the Life of…

gemma-hearn03I joined the Mercure Grosvenor Hotel kitchen as Sous Chef in May of 2013. As part of an almost brand new team the challenge was very exciting if not a little daunting! Within a month we had written and implemented a new menu, and were rewarded almost immediately with lots of positivist from guests and staff alike.

Not a stranger to Accor, I started my apprenticeship at the Novotel Barossa Valley Resort at 17, straight after graduating high school. It was an unforgettable experience as I got to witness firsthand the challenges and rewards of being part of the opening team of a brand new property. I then had the pleasure of working at Mount Lofty House, where I completed my apprenticeship.

I have spent the last 14 years working in South Australia, gaining experience as a chef and growing as a person, working with some excellent people along the way. I have worked in a vast array of venues including fine dining restaurants, function centres, hotels (big and small) and I believe this varied career has shaped me into the chef and person I am today.

Four years ago I met James – also a chef – and we became engaged last year. We recently bought our first home, an apartment in Adelaide CBD. We enjoy travelling together and hope to elope for an exotic destination wedding in the coming year. β€œOne cannot think well, love well, sleep well, if one has not dined well.” – Virginia Woolfe
